Best Brunch Ever: Norwegian Sour Cream Waffles Recipe (2)

It's hard not to love Scandinavian food - although maybe some of the fish oddities leave a bit to be desired.
One can't make that comment for vafler, the delicious sour cream waffles that are perhaps the country's most famous export! I think the sour cream keeps the batter light and fluffy -- and the pinch of cardamom doesn't hurt either (the Norwegians have been in love with cardamom since the Vikings left, I'm told).
Thankfully, you can recreate this Nordic deliciousness in your own home -- here's the magic recipe. We're assuming you've got the heart waffle iron; if not, you're totally missing out!

'Vafler' Norwegian Sour Cream Waffles


Ingredients:

  • 6 eggs
  • 1/2 cup sugar
  • 1 teaspoon ground cardamom
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 3 tablespoon butter for frying

Preparation:
Mix eggs, sugar, and cardamom together in a big bowl. Add in flour, baking powder, and salt. Mix these ingredients and beat in sour cream and melted butter until the batter is smooth.
Let the batter sit for about 20 minutes before you begin making the waffles. Heat up the iron and brush some of the butter onto the surface. Pour 1/4 cup of the batter in the iron and cook until the waffle is golden brown.
Serve warm, topped with jam (here are our favorite recipes) and healthy lashings of whipped cream or sour cream. We love waffles with a cup of Plum Deluxe Oregon Breakfast hazelnut tea.
