How to Make Beefy Potato Taco Casserole in a Slow Cooker
Aunt Lou here.
This casserole is meat and potatoes meets taco night. The combination is absolutely delicious! I shared some with our neighbors to rave reviews! If you wanted to make this super simple to throw together, do your prep work ahead of time. Peel and slice your potatoes, then put your slices in a bowl and cover with water. Brown and drain your ground beef ahead of time too, and you can throw this one together in a hurry! It is so good! You are going to love it!

I added onions while browning the beef and added corn and Bla beans as a layer on top of the beef before adding the other layers. It all kicked it up a notch.

I want to try this recipe while out camping with my family and done have electricity for a crockpot. Any idea how long and what temp it would need to cook in a Dutch oven (with coals)?

Made this today! Family loved it! I added thinly sliced onions on top of the potato layer and added 1/2 a packet more taco seasoning. I’m one of those girls that every recipe has to have garlic AND onions! Lol. The fam loved it!! Thanks for sharing!!

Tried this recipe tonight and really liked it. We did substitute Campbell’s Nacho Cheese soup instead of just cheddar soup. I think this would be really good adding some black beans in it as well. Thanks for sharing.Reply

Taste is delish but mine turned out pretty thin and soupy, not sure why.Reply

Very good! make sure to use Russet potatoes though. I’m pretty inexperienced in the kitchen and thought potatoes in general were pretty interchangeable and sued yellow potatoes. They did not soak up any flavor or anything so for the future make sure to use russets. Great recipe!Reply
